Mexican inspired rice salad
Delicious & quick. Just the way I like to cook !
Can be served like this , or with tacos ( which I'll do tomorrow with my leftovers 😁 )
+-2 to 3 servings
🌱120 gr white basmati rice
🌱80 gr red rice
🌱1/3 cucumber
🌱sweet corn
🌱1 red onion
🌱kidney beans
🌱salt&pepper
🌱lemon juice
🌱1 red bell pepper
🌱 tiny bit of leftover lettuce & carrot
Extra
🌱tortilla chips
🌱guacamole
📖
Cook your rice and let it cool off.
Prepare your vegetables (peel your pepper for your digestion).
Add everything with the rice once cooled.
Add a bit of salt&pepper for taste and sprinkle with lemon juice.
Voila !!

2 avocados mixed with lime juice, Salt&pepper and a tiny pinch of cayenne Pepper, cilantro if wanted
