Delicious stuffed bell peppers

Nomnomnom!!!  I came up with this recipe since me, my mom and my brother talked about stuffed peppers!
So I gave it a go and whipped up this delicious recipe that everyone ( yes even the meat eaters here ) loved!! I never saw my brother eat this much, there isn't a better compliment right?!?😛

For 4 persons
🌱 4 red bell peppers
🌱 1 onion
🌱 3 cloves of garlic
🌱 +-400 gr of canned chopped tomatoes
🌱 400-500 gr of rice of choice (I used    
      long grain
🌱 400 gr of vegan minced meat ( I
      used the soy kind, for my Belgian  
      followers; the one from lidl )
🌱 1 teaspoon of a spaghetti spices mix
🌱 1 teaspoon of a chicken spices mix
🌱 1/2 teaspoon of cayenne pepper
🌱 1 teaspoon of smoked paprika powder
🌱 1 teaspoon of oregano

Okay so let's get started !

Firstly, boil +-125gr of your rice!

Chop your onion fine, press your garlic.
Sauté the onion in an oil od choice and add the garlic. Once the onion is done add the 'minced meat'.

Don't let it cook too long or it will burn! Add the spices, then add the chopped tomatoes.
Add 1/2 cup of water or more if needed. Let it simmer a little bit.

Once the rice is done add it to the rest and stir.
Wash your bell peppers and cut them in 2, I did it this way, so it is easier to eat them than with the 'traditional' way that it gets cut.

Warm your oven to 200°c. (Grill stand)

Fill the peppers with your stuffing and put them in the oven for 25 minutes.

In the meanwhile cook the rest of your rice to eat with the peppers.
You will probably have some stuffing per by the way, just eat it with all the rest ;) you'll thank me later 😄.
