Quinoa spring rolls

Since I'm on a diet (😩😭) I'm looking for delicious ways to eat your basic vegetables. Since it gets boring really easy.
So I made some spring rolls with quinoa and tofu !

For 6 (big) spring rolls

🌱 250 gr of tofu
🌱 1 head of broccoli
🌱 4 carrots
🌱 half a cucumber
🌱 handful of soybean sprouts
🌱 150-200 gr of quinoa
🌱 tamari soy sauce
🌱 sweet&sour sauce or any dipping of
     choice
🌱 oil to stir fry the broccoli & tofu
🌱 rice paper

Firstly cook your quinoa and let it cool.
Chop your vegetables really fine.
Stir fry your small pieces of broccoli with soy sauce (and oil). So the broccoli soaks up the delicious soy sauce.

Fry your tofu until its crispy, add some chicken spices & soy sauce to the tofu.

Let your tofu and broccoli cool down, once cooled start with your rolls!

Soak your rice paper until foldable.
I also made my Cutting board a little wet so the rice paper wouldn't stick to it.

Start by adding a tablespoon of quinoa, then add the rest of your vegetables and tofu. Make sure you told them tightly so they don't fall apart.

Its actually easier than you would think!

Serve your rolls with your leftover qui no a and (store bought) sweet&sour sauce or any other dipping sauce of choice !

Really easy and I was full after 3 of these !
