Tofu & veg in a tomato ginger sauce

So i wanted to recreate a dish I once ate in Madrid. However this totally didn't taste like that 😂😂😂 so added some spices and it turned into this wonderful creation that everyone loved !

For 4 persons

🌱70gr tomato paste
🌱 1 onion
🌱 leek
🌱 bell pepper
🌱 soy sprouts
🌱 white cabbage
🌱 any veg that you want to stir fry
🌱 4 teaspoons minced ginger
🌱 1 teaspoon lemon grass
🌱 1 to 2 teaspoons of yellow curry 
      powder
🌱 500gr basmati rice
🌱 600gr of tofu ( frozen then defrosted )

Marinade your tofu in a mix of oil and chicken spices.
In HOT oil fry your tofu ( add some ginger already) once crispy keep aside.

Chop your vegetables and stir fry them starting with your onion first then add your ginger & lemongrass. Add the other vgetables and continue.

Boil your rice of course 😁.

Once vegetables are done add the tofu to it and add the tomato paste and 2 cups of water. Let it simmer a couple of minutes so the tofu can absorb the taste.
If not enough water add some more.

Add the curry powder & mix with a spoon.

Serve with your rice and enjoy!! 🌱🍜
