Aloo Dum & basmati rice

My favorite cuisine is hands down the indian cuisine !! I could eat indian food all day everyday!
So this is my oh so humble basic recipe for Aloo dum, for  those days when you think you can replicate food  from indian restaurants 😂. It is oh so delicious! 

For 2-3 people

🌱 4 large potatoes
🌱 +- 200gr of frozen peas
🌱 1 onion
🌱 4cloves  of garlic
🌱2 indian bay leaves
🌱 +- 5cm of fresh ginger
🌱 1 tsp  of cumin
🌱 1 tsp coriander seeds
🌱 couple of fresh coriander leaves to
      taste
🌱1/2 tsp turmeric
🌱 1/2 tsp salt
🌱 1tsp garam masala
🌱 1 green chili
🌱 1 tsp chilli powder
🌱 500gr of tomato passata
🌱 Oil of choice for cooking

FOR THE ALOO DUM:

Start by peeling and cutting your potatoes in small cubes, and boil them till 3/4th done.

Chop your onion, ginger and chilipepper really fine, press your garlic with a garlic press.

Start by sauteeing your onion, then add your garlic, ginger and chilipepper.

Add your cumin and coriander seeds and lower your heat.

Add your tomato passata, the peas and the rest of your spices, bay leaves etc.

Once your potatoes are 3/4th done add them to your sauce.

Let it simmer on a low heat  for 15-20 min.

FOR THE RICE

Start  by rinsing (2 times) +-400gr of basmati rice.
Once your water is boiling add your rice, add 2 cloves and a bay leave for extra taste. 

Enjoy !! PS: tastes even better the next day, I promise !
