Edamame & broccoli noodles
I'm back !
This time I have a cold noodle recipe, quick &easy and perfect for these hot summer days !
Being a single mother recipes that are quick and easy are a necessity !
Ain't nobody got time for recipes with 230 magical ingredients with a cooking time of 400 lightyears 🤷♀️
So here it is :
🌱 500 gr of noodles or pasta
🌱 +- 100 gr of edamame beans
🌱 1/2 head of broccoli or more if you like
🌱 2 spring onions
🌱 5 tablespoons tamari sauce (or soy
sauce)
🌱 1/4 teaspoon sesame oil
🌱 sesame seeds
🌱 extra oil for sauteing your broccoli

Boil your noodles or pasta , in the meanwhile prep your vegetables.
The spring onions you keep raw, the edamame beans are cooked for 3 to 5 minutes (or as instructed on your package!) and then left to cool down.
Cut your broccoli in small florets and sauté them in your oil of choice mixed with approx 1 tablespoon of tamari sauce, then leave to cool.
Once your noodles or pasta are cooled down add 4 tbsp of soysauce, 1/4tsp of sesame oil and add your vegetables.
Serve sprinkled with your sesame seeds !
