Ketjap tofu & sweet and sour ginger broccoli
A dish that is done in the cooking time of your rice.
YES that quick 😎.
I don't like bread lunches, never did and probably never will.
So for lunch I love to make the quickest warm dishes possible.
So today I came up with this, since I had some leftover broccoli 😂. Being inventice people, use what you already have !
🌱 1/2 head of broccoli
🌱 125 gr of rice
🌱 200 gr of tofu
🌱 piece of fresh ginger (approx 4 cm2 by
1cm thickness)
🌱 sweet & sour sauce (mine is
storebought)
🌱 1,5 tbsp Ketjap Manis sauce
🌱 1/2 tbsp tamari sauce
🌱 oil of choice , I used sunflower oil
🌱 1/4 cup of water

Cook your rice, in the meanwile cut your broccoli in fine florrets.
Chop your ginger as fine as possible and cut your tofu in pieces.
Start by sautéing your tofu in sunflower oil, add 1,5 tbsp of ketjap sauce, stir well.
Once the tofu is halfway done ( +-4min) add your broccoli in the sautépan with your ginger and 1/2 tbsp tamari sauce.
When finished ( when your broccoli is soft enough) add 1/4cup of water mixed with 1 tbsp sweet and sour sauce, stir well and let it simmer a bit.
Serve with extra sweet and sour sauce on the side.
